Ingredients
  

Salad
  • 2-3 cups chopped kale
  • 1/4 cup balsamic store-bought dressing, simple green salad dressing, or olive oil and lemon
  • 2-3 oranges, cut into rounds
  • 8 small cooked beets
  • 1 minced shallot
Creamy Element
  • 1/2 cup truffle ricotta or ricotta cheese
Toppings
  • 1/2 cup pistachios, chopped
  • 2 tablespoons fresh mint OR other chopped herbs you like (basil, chives, or thyme would be good)

Method
 

Preparation
  1. Massage the kale with a small amount of dressing until the leaves soften.
  2. Prepare the beets, oranges, and shallot by cutting them as needed for layering.
Assembly
  1. Spread some of the creamy element onto the serving platter. Use about 3 tablespoons for a salad serving one or about 1/2 cup for a salad serving 4-6.
  2. Arrange the remaining ingredients in layers over the platter in this order: massaged kale, beets, oranges, shallots, pistachios, and herbs.
  3. Finish with olive oil, salt, and pepper if desired.

Notes

A simple green salad dressing works especially well with this salad and complements the kale. A creamy balsamic dressing can also work well.
