Almond Butter Zucchini Bars with Chocolate Chips and Dates

Ingredients
  

Batter
  • 2 cups rolled oats
  • 1/4 cup + 2 tablespoons olive oil
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 8 medjool dates, pitted
  • 1–2 zucchini, grated and squeezed once (about 2 cups total, divided)
  • 2 eggs
  • 1 teaspoon baking soda
  • pinch of kosher salt
Topping
  • chocolate chips (optional, for topping)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Reserve about half of the zucchini and chocolate chips for adding later.
  2. Blend the remaining ingredients together until a mostly smooth batter forms.
Baking
  1. Mix the reserved zucchini and chocolate chips into the batter.
  2. Transfer the batter to a 9×9 or similar square baking dish.
  3. Bake for 30-40 minutes, until the top is golden brown and the surface gently springs back when pressed.
Serving
  1. Allow the bars to cool completely for cleaner slices, or serve warm if desired.

Notes

For a version without dates, use 1/2 cup almond butter and 1/2 cup maple syrup, and leave out the dates. This creates a delicious variation while keeping the same style of bars.
