Preparation
- Process the oats and almond meal together for 30 seconds, or until they become a flour-like mixture. Transfer the mixture to a large bowl.
- Stir the flour into the ground oat and almond mixture. Add the milk, egg, vanilla, brown sugar, and salt, then whisk for 20 seconds until the batter is smooth and combined.
Cooking
- Warm a large nonstick skillet over low heat. Pour about 1/4 cup of batter into the skillet and gently swirl the pan once to spread it into a thin crepe.
- Cook until the edges release easily with a spatula. Carefully loosen the crepe from the outer edges toward the center, then remove it from the pan. Repeat with the remaining batter.
Filling and Serving
- Fill the crepes with sliced bananas and desired fillings. Drizzle with the melted chocolate and serve warm or cold.
Notes
Keep the heat low because the crepes can burn easily. If clear bubbles appear immediately after pouring the batter, the mixture may be too thin and needs more flour. Use a good quality nonstick pan without oil or butter so the crepes release easily. The crepes can be cooked on both sides, but flipping is not necessary. Work patiently and carefully when releasing them from the pan, as they are delicate.
