Ang'S Chicken Wraps with Cheddar and Fresh Vegetables

Ingredients
  

Cheddar Cheese Crispies
  • 1 1/2 cups shredded cheddar cheese
Wraps
  • whole wheat wraps
  • about a pound of grilled chicken or pulled rotisserie chicken meat, cut into small pieces
  • 2 ears fresh sweet corn, cut off the cob
  • 1 red onion, very thinly sliced
  • a head of fresh lettuce, shredded
  • a couple of small fresh tomatoes, thinly sliced or chopped
Sauces
  • ranch dressing
  • Chick-Fil-A sauce, or homemade honey mustard sauce

Method
 

Preparation
  1. Prepare the cheddar cheese crisps by placing small piles of shredded cheddar in a nonstick or cast iron pan, working with 2 at a time.
  2. Cook the cheese over medium heat until melted and the edges become crisp.
  3. Carefully lift the cheese crisps from the pan and place them on a plate to cool until firm and crunchy.
Assembly
  1. Lay a whole wheat wrap flat and place a cooled cheddar crisp along one edge of the wrap.
  2. Add the chicken and drizzle with Chick-Fil-A sauce.
  3. Layer on the corn, tomatoes, onions, lettuce, and ranch dressing.
  4. Fold the wrap closed and serve.

Notes

You can use thinly sliced red onion in the wrap or prepare quick pickled onions instead. To make pickled onions, place thinly sliced red onions in a jar, add a pinch of salt, a pinch of sugar, and fill the jar about one-third full with white vinegar. Add water to fill the jar, shake, and refrigerate. The onions will be ready after about an hour and can be kept in the refrigerator for 1-2 weeks. Any dips or sauces can be used; the Chick-Fil-A sauce and ranch combination is one suggested pairing, but homemade or other prepared sauces also work well.
