Preparation
- Combine the green onions, lettuce or slaw, almonds, carrots, cilantro, edamame, and sesame seeds in a large bowl and toss to distribute the salad ingredients.
- Whisk together the soy sauce, garlic, ginger, sugar, and Chinese 5 spice seasoning to make the marinade.
Marinating
- Place the chicken breasts in the marinade and allow them to marinate for at least 1 hour.
Cooking
- Bake the chicken in the marinade at 400°F (204°C) for about 20-30 minutes, turning occasionally, until fully cooked.
- Let the chicken cool, then shred it and add it to the salad mixture.
Assembly
- Add the dressing of your choice and chow mein noodles just before serving, then toss to combine.
Notes
Dressing: A bottled dressing was used, but a quick homemade Asian dressing can also be made by blending 2 tablespoons sugar, 1 teaspoon salt, 1/4 cup oil, 3 tablespoons white vinegar, 1/2 cup chunky peanut butter, 1 tablespoon hoisin, 1 tablespoon soy sauce, and about 1/3 cup water in a food processor.
