Ingredients
  

  • 2 oz. blue cheese, crumbled (57 g)
  • 1 avocado
  • 1 tablespoon finely chopped shallots
  • 2 tbs. sour cream
  • 1/4 cup milk
  • 1 tablespoon fresh lemon juice or white wine vinegar
  • 1 tsp. red wine vinegar
  • 1 pinch sugar
  • salt, pepper, and olive oil, as needed

Method
 

Preparation
  1. Saute the shallots with 1 tsp. olive oil in a pan until softened and fragrant. Allow them to cool for a few minutes, then place them in a small mixing bowl.
  2. Add all ingredients except the avocado to the bowl with the cooked shallots and mash or stir until combined, leaving the texture as chunky or smooth as desired.
  3. Slice the avocado and mix it into the dressing. Mash or stir to reach the preferred consistency, then season with salt and pepper.
  4. If the dressing is too thick, add a drizzle of olive oil or another tbs. of milk to adjust the consistency.

Notes

Adjust the amount of mashing to create a chunkier or smoother avocado blue cheese dressing texture.
