  • 2 cucumbers, diced, seeds removed (about 2 cups)
  • 3-4 grapefruit or oranges, peeled and chopped (about 2 cups)
  • 2-3 avocados, diced (about 1 1/2 cups)
  • 1/3 cup almonds, chopped
  • 2 tablespoons fresh mint, chopped
  • 3-4 tablespoons fresh chives, chopped
Dressing
  • 1 tablespoon vinegar (or lime or lemon juice)
  • 1 1/2 tablespoon honey
  • 1 1/2 tablespoons olive oil
  • salt, to taste
  • grapefruit or orange zest, to taste

Method
 

Preparation
  1. Combine the diced cucumbers, chopped grapefruit or oranges, almonds, mint, and chives in a bowl, handling the ingredients gently.
  2. Whisk together the vinegar or citrus juice, honey, olive oil, salt, and zest to make the dressing. Taste and adjust the seasoning as needed, then drizzle the dressing over the salad mixture.
  3. Chill the salad until ready to serve.
  4. Add the avocado pieces just before serving and gently fold them into the salad. Finish with additional herbs or almonds if desired.

Notes

Add the avocado shortly before serving because it softens quickly when mixed into the salad. For the best presentation, enjoy the salad on the same day it is prepared.
