Ingredients
  

Zucchini
  • 2 medium zucchini, sliced into sticks
Coating
  • 1 large egg white
  • 1/3 cup seasoned bread crumbs
  • 1/4 tsp. garlic powder (optional)
  • salt and fresh pepper

Method
 

Preparation
  1. Beat the egg white in a small bowl and season with salt and pepper.
  2. Combine the bread crumbs and garlic powder in a ziplock bag, then shake to distribute the seasoning.
  3. Coat a cookie sheet with cooking spray and set it aside.
Coating
  1. Dip each zucchini stick into the seasoned egg white, then place the pieces into the breadcrumb mixture a few at a time and shake to coat evenly.
  2. Arrange the coated zucchini sticks in a single layer on the prepared cookie sheet and lightly spray the tops with additional cooking spray.
Baking
  1. Bake at 400°F / 200°C for 20–25 minutes, or until the zucchini fries are golden brown.
Serving
  1. Serve the baked zucchini fries with marinara sauce for dipping.

Notes

Arrange the zucchini sticks in a single layer before baking to help the breadcrumb coating develop a crisp texture.
