Ingredients
  

Balsamic Reduction
  • 1 cup balsamic vinegar
Salad
  • 1 lb. boneless skinless chicken breasts (454 g)
  • 3 teaspoons all purpose seasoning
  • 1 tablespoon olive oil
  • 4 cups baby spinach or greens
  • 2 cups cubed watermelon
  • 1/2 cup blue cheese crumbles
  • 1/4 cup sliced or crushed almonds

Method
 

Preparation
  1. Add balsamic vinegar to a small saucepan and bring it to a boil. Lower the heat and simmer for 15-20 minutes, until the vinegar has reduced significantly and reaches a syrupy consistency.
  2. Season both sides of the chicken breasts with all purpose seasoning and drizzle with olive oil.
Cooking
  1. Heat a grill or nonstick skillet over high heat. Cook the chicken until it is no longer pink inside and has a browned exterior.
  2. Allow the cooked chicken to rest for 5 minutes, then cut it into small cubes.
Assembly
  1. Arrange the spinach or greens with the chicken, watermelon, blue cheese, and almonds. Drizzle with the balsamic reduction to taste and add additional olive oil if desired.

Notes

Allow the cooked chicken to rest before cutting to help keep the pieces moist when added to the salad.
