Ingredients
  

  • 2 cups oats
  • 3 bananas
  • 2 eggs
  • 3/4 cup pitted whole dates
  • 1 teaspoon baking soda
  • pinch of salt and cinnamon, optional
  • chocolate chips, optional

Method
 

Preparation
  1. Preheat oven to 350°F / 175°C.
  2. Grease a standard muffin tin.
  3. Combine all ingredients in a blender or food processor and blend until the mixture becomes smooth.
Baking
  1. Divide the batter into the prepared muffin tin, making 10-12 standard-size muffins.
  2. Add chocolate chips on top if desired.
  3. Bake for 15-20 minutes.
Storage
  1. Store the baked muffins in the refrigerator for up to 3 days.

Notes

Very soft pitted dates work well in this recipe because they blend easily into the batter. Medjool dates can also be used. If the dates are firmer, soak them briefly in warm water before blending, especially when using a less powerful blender.
