Preparation
- Pour coconut milk into a medium saucepan over low heat and warm until it begins to bubble slightly, about 5 minutes.
- Stir in brown sugar until the sauce is smooth. Continue cooking at a low boil while stirring frequently until it reaches the desired thickness. The sauce will thicken further as it cools.
- Steam the lumpia wrappers for a few minutes to soften them and make separation easier.
- Peel the bananas and slice them in half lengthwise. Trim or divide further if needed so they fit inside the wrappers.
- Place each banana piece on a wrapper. Moisten the wrapper edge with water, fold the top and bottom over the banana, then roll sideways and seal with additional water as needed.
Cooking
- Heat the frying oil in a large skillet or frying pan over low heat. When water droplets sizzle on the surface, add the lumpia in batches.
- Fry the rolls for 3-5 minutes on each side until the wrappers are golden and crisp.
- Transfer the fried lumpia to paper towels and allow them to cool for 10 minutes.
Serving
- Serve the banana lumpia with the coconut caramel sauce.
Notes
The coconut caramel sauce continues to thicken slightly as it cools, so check the consistency while it is still warm.
