Banana Lumpia with Coconut Caramel Sauce and Turon

Ingredients
  

Banana Lumpia
  • 10 small bananas
  • 20 fresh lumpia wrappers
  • 1-2 cups oil for frying
Coconut Caramel Sauce
  • 1 cup coconut milk
  • 3/4 cup brown sugar
  • water

Method
 

Preparation
  1. Pour coconut milk into a medium saucepan over low heat and warm until it begins to bubble slightly, about 5 minutes.
  2. Stir in brown sugar until the sauce is smooth. Continue cooking at a low boil while stirring frequently until it reaches the desired thickness. The sauce will thicken further as it cools.
  3. Steam the lumpia wrappers for a few minutes to soften them and make separation easier.
  4. Peel the bananas and slice them in half lengthwise. Trim or divide further if needed so they fit inside the wrappers.
  5. Place each banana piece on a wrapper. Moisten the wrapper edge with water, fold the top and bottom over the banana, then roll sideways and seal with additional water as needed.
Cooking
  1. Heat the frying oil in a large skillet or frying pan over low heat. When water droplets sizzle on the surface, add the lumpia in batches.
  2. Fry the rolls for 3-5 minutes on each side until the wrappers are golden and crisp.
  3. Transfer the fried lumpia to paper towels and allow them to cool for 10 minutes.
Serving
  1. Serve the banana lumpia with the coconut caramel sauce.

Notes

The coconut caramel sauce continues to thicken slightly as it cools, so check the consistency while it is still warm.
