Bbq Jackfruit Sandwiches with Chickpea Filling and Slaw

Ingredients
  

Filling
  • 1/4 cup olive oil
  • 14-ounce can young jackfruit in brine, drained and rinsed
  • 1/2 cup canned chickpeas, drained and rinsed
  • 2 cloves garlic
  • 1 tablespoon brown sugar
  • paprika, chili powder, and onion powder, several shakes
  • salt, a pinch
  • 1/4 cup barbecue sauce
Slaw and Serving
  • pre-made slaw bag mix, ideally
  • thinly sliced cabbage + mayo, lemon juice or vinegar, sugar and salt, otherwise
  • toasted buns (I like brioche buns)
  • any other toppings you like – I’d recommend avocado, pepperoncini, pickles, hot sauce, etc.

Method
 

Preparation
  1. Heat the olive oil in a pan over medium-high heat. Add the jackfruit and use the back of a spoon to separate it into shredded pieces.
  2. Pulse the chickpeas and garlic in a small chopper or food processor until finely chopped.
Cooking
  1. Add the chickpea and garlic mixture to the pan with the jackfruit, then stir in the brown sugar and spices until the filling is evenly seasoned.
  2. Mix in the barbecue sauce and continue cooking until the filling develops some roasted flavor. Allowing the mixture to sit undisturbed in the pan longer will create more browning.
Assembly
  1. Serve the BBQ jackfruit filling on toasted buns with slaw and any additional toppings you like.
