Ingredients
  

For the broth and beef
  • 1 lb beef (chuck or brisket), cut into chunks Trim excess fat before cooking.
  • 4 cups beef broth Low sodium recommended for better salt control.
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce Adds depth to the broth.
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil Adds flavor.
For serving
  • 4 servings ramen noodles Cooked separately.
  • 2 pieces soft-boiled eggs For topping.
  • fresh greens For topping, e.g., baby spinach or bok choy.
  • crunchy vegetables For topping, e.g., carrots, daikon.

Method
 

Preparation
  1. In a slow cooker, combine the beef, beef broth, soy sauce, oyster sauce, ginger, garlic, and sesame oil.
  2. Cover and cook on low for 6-8 hours or until the beef is tender.
  3. Remove the beef and shred it with a fork, then return it to the slow cooker.
Cooking the Ramen
  1. Cook the ramen noodles according to package instructions.
Serving
  1. To serve, place the noodles in bowls, ladle the beef broth and beef mixture over the noodles, and top with soft-boiled eggs, fresh greens, and crunchy vegetables.

Notes

Trim excess fat from beef for less greasy broth. Sear beef for more flavor. Use freshly made ramen noodles just before serving to maintain texture.
