Ingredients
  

  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 cup shortening
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups flour (+ 2-3 tablespoons)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups M&M’s

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the brown sugar, white sugar, shortening, eggs, and vanilla using an electric mixer on low speed until evenly blended.
  2. Add the flour, baking soda, and salt to the bowl. Mix until the dry ingredients are incorporated, finishing by hand if needed. Add the extra tablespoons of flour gradually until the dough becomes thick and almost dry to the touch.
  3. Fold the M&M’s into the cookie dough until evenly distributed.
  4. Shape the dough into large balls. Press additional M&M’s onto the tops, then gently flatten each cookie slightly with your palm or the back of a wooden spoon.
Baking
  1. Bake the cookies for 8-10 minutes until they are slightly underbaked.
  2. Transfer the cookies from the baking sheet to a cooling rack immediately after baking. Allow them to stand for 5-10 minutes so they can set and hold their shape.

Notes

Adding a little extra flour helps prevent the cookies from becoming flat. If too much flour is added and the cookies do not spread, gently press them down with your palm or the back of a wooden spoon before baking to create a more traditional cookie shape.
