Biscuits and Gravy Egg Bake with Sausage and Green Chiles

Ingredients
  

Sausage Gravy
  • 1 lb. breakfast pork sausage
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1 can green chiles
Egg Bake
  • 8 eggs
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 12-ounce (340 g) tube of buttermilk biscuits (about 6-8 biscuits), cut into small cubes
  • 1 cup white cheddar cheese

Method
 

Preparation
  1. Brown the sausage in a large cast iron skillet, then transfer it out of the pan and remove excess grease.
  2. Melt the butter in the same skillet over medium-low heat. Whisk in the flour and cook for 2-3 minutes until thickened.
  3. Gradually add the milk about 1/2 cup at a time, whisking to form a smooth gravy. Stir in the salt, diced green chiles, and cooked sausage.
  4. In a separate bowl, combine the eggs, milk, and salt by whisking until blended.
Baking
  1. Preheat the oven to 350°F / 175°C. Grease a 9×13 pan and spread half of the biscuit cubes across the bottom.
  2. Pour the egg mixture over the biscuits, then add the cheese and some of the gravy while reserving the remaining gravy for serving.
  3. Arrange the remaining biscuit pieces over the top and bake for 35 minutes, until the egg layer is set.
Serving
  1. Serve warm slices topped with the reserved green chile sausage gravy, thinning the gravy with a little more milk if needed for a pourable consistency.

Notes

Reserve some of the sausage gravy for topping the baked casserole so each serving keeps its creamy gravy finish.
