Preparation
- Brown the sausage in a large cast iron skillet, then transfer it out of the pan and remove excess grease.
- Melt the butter in the same skillet over medium-low heat. Whisk in the flour and cook for 2-3 minutes until thickened.
- Gradually add the milk about 1/2 cup at a time, whisking to form a smooth gravy. Stir in the salt, diced green chiles, and cooked sausage.
- In a separate bowl, combine the eggs, milk, and salt by whisking until blended.
Baking
- Preheat the oven to 350°F / 175°C. Grease a 9×13 pan and spread half of the biscuit cubes across the bottom.
- Pour the egg mixture over the biscuits, then add the cheese and some of the gravy while reserving the remaining gravy for serving.
- Arrange the remaining biscuit pieces over the top and bake for 35 minutes, until the egg layer is set.
Serving
- Serve warm slices topped with the reserved green chile sausage gravy, thinning the gravy with a little more milk if needed for a pourable consistency.
Notes
Reserve some of the sausage gravy for topping the baked casserole so each serving keeps its creamy gravy finish.
