Preparation
- Preheat the oven to 325°F / 163°C. Prepare two 8 or 9-inch round cake pans with non-stick spray or parchment circles on the bottoms.
Orange Mixture
- Add the peeled oranges and agave to a food processor and pulse until a pulpy juice mixture forms. Set aside.
Cake
- Whisk together the sugar, eggs, and olive oil until combined.
- Mix in the orange mixture, then add the flour, baking powder, baking soda, and salt. Stir just until the batter comes together.
- Divide the batter between the prepared cake pans and gently tap the pans on the counter to release air bubbles.
- Bake for 35-45 minutes, or until the tops spring back when lightly touched.
- Allow the cakes to cool completely to room temperature before adding the whipped cream layers.
Whipped Cream and Assembly
- Beat the heavy whipping cream with an electric mixer until light and fluffy, then fold in the agave.
- Spread whipped cream over the center of the first cake layer, keeping it away from the edges.
- Place the second cake layer on top and spread another layer of whipped cream over the surface.
- Finish with blueberries, pistachios, and additional agave.
Notes
For an extra citrus boost, orange juice can be simmered into a thick syrup, mixed with a small amount of agave, and poured over the cooled cakes after making holes in the layers before frosting. The cake is especially enjoyable when refrigerated after adding the syrup.
