Preparation
- Prepare the pizza dough following the package directions.
- Heat the oven to 500°F (260°C), or the highest temperature your oven can reach.
- Split the dough into two portions. Stretch one portion into a 14-inch round pizza, using flour as needed to prevent sticking. Transfer it to a baking sheet, pizza pan, or baking stone. Freeze the remaining dough portion for another pizza.
Assembly
- Spread a thin layer of kale pesto over the pizza dough. Add the sun dried tomatoes evenly, then cover with mozzarella cheese.
- Create three or four small openings in the cheese layer. Crack the eggs and place them into the openings over the cheese.
Baking
- Bake the pizza on the highest oven rack for 6-10 minutes, until the crust is baked, the cheese is melted and bubbly, and the eggs reach your preferred doneness.
- Remove the pizza from the oven, allow it to stand for a few minutes, then slice and serve.
Notes
The baking timing is important for achieving soft eggs and well-browned cheese. Avoid opening the oven frequently because the high heat helps the crust bake properly. Watch the pizza closely near the end of baking and adjust as needed for your oven, since the eggs will continue to firm slightly after removal. Adding meat such as sausage or chorizo can create a heartier version.
