  • 1 small apple, diced

  • ¾ cup lowfat plain yogurt or Greek yogurt
  • ¼ teaspoon cinnamon
  • 1/2 tablespoon flax seeds (optional)
  • 1 tablespoon brown sugar

Notes

To prepare dry wheat berries, cover them with water in a large pot and cook uncovered over medium-high heat for about 45 minutes. Add more water as needed because the grains absorb a significant amount during cooking. Cook longer for a softer texture or less time for a firmer texture, and ensure the water has been absorbed when finished. For advance preparation, add a small amount of lemon juice or salt water to the apples to help prevent browning. Use a thicker yogurt such as Greek yogurt to help prevent excess liquid after chilling.
