Ingredients
  

Dressing
  • juice of one lemon
  • juice of one orange
  • 1-2 tablespoons apple cider, maple, or honey
  • 1 shallot, minced
  • 1/2 cup olive oil
  • 1/2 teaspoon salt and pepper, to taste
Salad
  • 4 dozen brussels sprouts
  • 1 cup almonds
  • 6 slices cooked bacon, crumbled or chopped
  • 1 cup grated Parmesan cheese (Asiago or Gruyere are also good)

Method
 

Preparation
  1. Whisk the lemon juice, orange juice, apple cider, and minced shallot together in a small bowl. Slowly pour in the olive oil while whisking until the dressing becomes smooth and creamy-looking.
  2. Thinly slice the brussels sprouts with a mandoline, keeping the stem end attached for control while cutting. Remove the remaining stem portion, then separate the shreds with your fingers.
  3. Pulse the almonds in a food processor until finely chopped.
Assembly
  1. Combine the shredded brussels sprouts, chopped almonds, bacon, Parmesan cheese, and dressing. Toss until the ingredients are evenly coated, then serve immediately or within a few hours.

Keep the almond pieces finely chopped so they distribute evenly throughout the salad and maintain a balanced texture.
