Buffalo Chicken Bowls with Cauliflower Garlic Rice

Ingredients
  

Marinade
  • 1 lb. chicken breast fillets, pounded or cut in half lengthwise so they are flat and thin
  • 1/4 cup hot sauce
  • 2 tablespoons raw honey
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon onion powder
  • black pepper, as needed
Cauliflower Garlic Rice
  • 1 cup white rice
  • 1 package riced cauliflower
  • 1-2 tablespoons extra virgin olive oil
  • salt, to taste
Serving
  • cucumbers, sliced
  • cherry tomatoes, halved
  • dill dip or avocado cilantro dressing

Method
 

Preparation
  1. Combine chicken, hot sauce, honey, garlic powder, paprika, salt, onion powder, and black pepper in a bowl or bag. Refrigerate the chicken mixture for 30 minutes to 2 hours.
Cooking
  1. Prepare the white rice according to the package directions.
  2. Spread cauliflower rice on a sheet pan. Drizzle with olive oil and season with salt. Roast at 425°F (218°C) for 20-30 minutes until partially browned and lightly roasted. Stir the roasted cauliflower rice into the cooked rice. If desired, add garlic powder, lemon juice, parsley, or parmesan for extra seasoning.
  3. Heat a grill pan over high heat. Add a small amount of olive oil if needed, then place the marinated chicken pieces in the pan after removing and discarding excess marinade. Cook for a few minutes per side until browned and no longer pink inside. Transfer the chicken from the pan and allow it to rest for a few minutes.
Assembly
  1. Slice the chicken and serve over the cauliflower rice mixture. Add sliced cucumber and tomatoes, then finish with a dollop of dill dip or ranch dressing.

Notes
