Ingredients
  

Cookie Layer
  • 1 roll refrigerated chocolate chip cookies
Marshmallow Layer
  • 3 1/2 cups miniature marshmallows
Peanut Butter Popcorn Topping
  • 1 bag butter-flavor microwave popcorn, popped
  • 2/3 cup light corn syrup
  • 1/4 cup butter or margarine
  • 1 bag peanut butter chips
Chocolate Drizzle
  • 1 cup semisweet chocolate chips

Method
 

Baking
  1. Press the cookie dough evenly into the bottom of an 8×8 or 9×9 square baking pan. Bake at 350°F (177°C) for about 15 minutes, or until the surface appears dry and begins to turn golden brown.
Cooking
  1. Warm the corn syrup, butter, and peanut butter chips together over medium heat until melted.
Assembly
  1. Remove the cookie layer from the oven and scatter the miniature marshmallows over the top. Return the pan to the oven for 5 minutes, until the marshmallows puff.
  2. Stir the popped popcorn into the warm peanut butter mixture until evenly coated. Spread the popcorn mixture over the marshmallow layer and gently press it into place.
  3. Melt the semisweet chocolate chips and drizzle the chocolate over the top. Allow the bars to cool for several hours before cutting and serving.

Notes

For cleaner cuts, allow the layered bars to cool fully before slicing.
