Ingredients

Oatmeal
  • 1 cup rolled oats
Caramelized Bananas
  • 3 bananas, sliced into rounds
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • sprinkle of cinnamon
  • dash of vanilla
Toppings
  • sea salt, chocolate chips, and other desired toppings

Method

Preparation
  1. Prepare the oatmeal according to package directions. For a creamier texture, cook the oats in milk.
Cooking
  1. Warm the oil in a skillet over medium heat. Add the maple syrup, cinnamon, and vanilla, then cook briefly until the mixture becomes lightly foamy and combined.
  2. Place the banana rounds into the skillet mixture and simmer for a few minutes on each side until they are soft and plump.
Assembly
  1. Take the skillet off the heat. Mix half of the bananas into the oatmeal and keep the remaining bananas for topping. Finish with desired toppings before serving.

Notes

The amount of cinnamon sauce in the pan may be more than needed for serving with the oatmeal, but it provides the right amount for cooking the bananas.
