Cashew Crunch Salad

A quick, crisp slaw featuring crunchy nuts, fresh herbs, and a tangy sesame-scented dressing, perfect as a side or a full meal.

Ingredients
  

For the salad
  • 1/2 head green cabbage, finely shredded
  • 1/2 head purple cabbage, finely shredded
  • 2 cups carrots, matchstick-cut or shredded
  • 1 cup fresh cilantro, chopped
  • 1/2 cup sliced green onion
  • 2 cups cooked edamame
  • 1-2 cups roasted cashews
  • 2 cups crunchy chow mein noodles (optional) Add just before serving
  • chicken, shrimp, or any other protein you like Optional additions for a fuller meal
For the dressing
  • 1/4 cup olive oil
  • 3 tablespoons white vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • a few shakes of garlic powder
  • 1/4 cup Greek yogurt or mayo (optional) For a creamier dressing

Method
 

Prepare the dressing
  1. Shake the dressing ingredients (olive oil, vinegar, sesame oil, sugar, salt, garlic powder) in a jar until smooth.
  2. Add the Greek yogurt or mayo (if using) and shake again until smooth.
Assemble the salad
  1. Toss all the salad ingredients together in a large bowl.
  2. Drizzle with the dressing and serve!

Notes

Store leftover salad and dressing separately to keep them crisp. Garnish with extra cilantro and crushed roasted cashews before serving. Use pre-shredded vegetables to save time.
