Preparation
- Preheat the oven to 450°F (232°C). Toss the tofu with olive oil, soy sauce, and cornstarch until evenly coated. Arrange the tofu on a parchment-lined baking sheet.
- Bake the tofu for 20-30 minutes, stirring halfway through the baking time.
- Process the cauliflower florets in batches until they reach a rice-like texture.
Cooking
- Heat olive oil over medium heat. Add the garlic, ginger, peas, and carrots, and cook until sizzling and fragrant.
- Add the cauliflower rice, soy sauce, and Sriracha to the pan. Sauté for 1-2 minutes, just until the cauliflower begins to soften.
- Create a space in the center of the pan. Add sesame oil and the beaten eggs, then gently scramble the eggs in the center until cooked.
- Stir the scrambled eggs into the cauliflower fried rice mixture.
Serving
- Serve the cauliflower fried rice topped with green onions and additional Sriracha if desired.
