  • 1 lb chicken sausage, sliced Use your favorite type of chicken sausage.
  • 2 cups broccoli florets Fresh broccoli is preferred for optimal texture.
  • 1 ½ cups orzo pasta Regular dry orzo works best.
  • 3 cloves garlic, minced Adjust quantity to taste.
  • 1 medium onion, chopped Yellow or white onion works well.
  • 4 cups chicken broth Use low-sodium if adding extra salt later.
  • ½ cup grated Parmesan cheese Reserve some for serving.
  • to taste Salt and pepper Add at the end to adjust seasoning.

Method
 

Preparation
  1. In a large skillet, cook the chicken sausage slices until browned. Remove from the skillet and set aside.
  2. In the same skillet, sauté the garlic and onion until fragrant.
  3. Add the broccoli florets and cook until slightly tender.
Cooking
  1. Stir in the orzo pasta and chicken broth. Bring to a simmer.
  2. Cover and cook for about 10-12 minutes or until the orzo is cooked through.
  3. Add the cooked chicken sausage back to the skillet and mix well.
  4. Sprinkle Parmesan cheese over the dish and season with salt and pepper to taste.

Notes

Serve hot in shallow bowls. A drizzle of olive oil or a squeeze of lemon enhances flavor. Pairs well with green salad or steamed green beans.
