Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, and bell pepper; sauté until softened.
Building the Soup
  1. Stir in diced tomatoes, chicken broth, cooked chicken, black beans, and corn.
  2. Add cumin, chili powder, salt, and pepper; bring to a boil.
Cooking
  1. Reduce heat and simmer for about 20 minutes.
Serving
  1. Serve hot, garnished with tortilla strips, cilantro, sour cream, and lime wedges if desired.

Notes
