Pasta and Sauce Ingredients
  • 8 oz spaghetti or fettuccine Use any pasta shape you prefer.
  • 1 cup ripe tomatoes (diced) Fresh tomatoes are best, but canned can be used.
  • 1 cup heavy cream Warm slightly before adding.
  • 4 cloves fresh garlic (minced) Freshly minced garlic delivers the best flavor.
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil (chopped) Add just before serving for best flavor.
  • Salt and pepper to taste

Method
 

Cooking Pasta
  1. Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain and set aside.
Preparing Sauce
  1. In a large skillet, heat olive oil over medium heat.
  2. Sauté minced garlic until golden brown.
  3. Add diced tomatoes, salt, and pepper. Simmer for about 5 minutes.
  4. Lower the heat and stir in heavy cream until well blended.
Combining and Serving
  1. Toss cooked pasta in the sauce until evenly coated.
  2. Serve topped with fresh basil and optional grated Parmesan cheese.

Notes

Serve immediately for the best creamy texture. Pair with a salad or steamed vegetables, and enjoy with a light-bodied white wine or sparkling water with lemon.
