Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 12-16 oz / 455 g Andouille sausage, sliced
  • 1 14-ounce can fire roasted crushed tomatoes
  • 2-3 tablespoons tomato paste (optional – it makes it thicker)
  • 2 green or red bell peppers, chopped
  • half an onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon Creole seasoning
  • 1-2 teaspoons salt, if your Creole seasoning doesn’t have any

Preparation
  1. Prepare and measure all ingredients before cooking.
Cooking
  1. Add all ingredients to the Instant Pot and cook using manual high pressure for about 8 minutes.
  2. Shred the chicken directly in the pot after cooking.
  3. Taste the dish and adjust seasoning as needed before serving.
Serving
  1. Serve the Creole chicken and sausage over rice with desired toppings.

Notes

For a freezer version, assemble the ingredients in a bag or container and cook from frozen in the Instant Pot on high pressure for about 15 minutes. Andouille sausage is the preferred choice, but kielbasa can also be used. The sausage may be cooked with the chicken and vegetables as directed, or pan-fried separately for browned edges before adding at the end. Additional vegetables such as butternut squash, corn, zucchini, spinach, or mushrooms can be added. For a thicker or creamier texture, adjust the tomato base or stir in Greek yogurt, sour cream, or almond butter after cooking.
