Ingredients
  

Grain Base
  • 2 cups cooked quinoa or brown rice Use pre-cooked for quick preparation.
Main Protein
  • 1 lb chicken breast, grilled and sliced Season with salt, pepper, and lemon when grilling.
Fresh Vegetables
  • 1 cucumber diced Add crunch and freshness.
  • 1 cup cherry tomatoes, halved For sweetness and color.
  • 1 small red onion, thinly sliced
  • 1 bell pepper diced For texture and flavor.
  • 1/4 cup olives, pitted and sliced Drain and pat dry before adding.
  • 1/2 cup feta cheese, crumbled Reserve some for garnish.
Seasoning and Garnish
  • to taste salt and pepper Use to taste for seasoning.
  • fresh parsley for garnish Simple garnish to brighten the bowl.
Sauce
  • Tzatziki sauce (homemade or store-bought) Add just before serving.

Method
 

Preparation
  1. In a large bowl, combine cooked quinoa or brown rice with the grilled chicken slices.
  2. Top with diced cucumber, cherry tomatoes, red onion, bell pepper, feta cheese, and olives.
  3. Season with salt and pepper to taste.
  4. Serve in bowls and drizzle with homemade tzatziki sauce.
  5. Garnish with fresh parsley before serving.

Notes

Store components separately for best shelf life. Assemble just before serving for best texture.
