Salad
  • 1 bag preshredded coleslaw
  • 1 cup shredded carrots
Dressing
  • 1/3 cup coconut milk
  • 1/2 cup light sour cream
  • 2 tablespoons sugar
  • 1 tablespoon green curry paste
  • 1 teaspoon curry powder
  • 1 teaspoon vinegar
Add-ins
  • 1/4 cup golden raisins
  • 1/4 cup sunflower seeds or other nuts
  • fresh cilantro

Method
 

Preparation
  1. Whisk together the coconut milk, sour cream, sugar, green curry paste, and curry powder until the dressing is combined.
  2. Combine the coleslaw and carrots in a large bowl, then toss with the dressing mixture. Stir in the raisins, sunflower seeds, and cilantro until evenly incorporated.
  3. Cover and refrigerate for 1 hour, then toss the salad again before serving.

Notes

Refrigerating the salad allows the dressing to coat the vegetables evenly before the final toss.
