Ingredients
  

  • 2 cups rolled oats
  • 8 medjool dates, pits removed
  • 1/2 cup olive oil
  • 1/4 cup real maple syrup
  • 3-4 carrots, peeled and shredded (about 2 cups total)
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • walnuts or raisins (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Grate the carrots.
  2. Combine all ingredients in a blender and blend until a chunky batter forms.
Baking
  1. Transfer the batter to a greased or lined muffin tin.
  2. Bake for 15-18 minutes, until the muffin tops spring back gently when pressed.
Serving
  1. Serve the muffins warm or cold.

Notes

If the dates are firm, soak them in hot water for a short time first to make them easier to blend.
