  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup sun-dried tomatoes Use fresh or oil-packed for better flavor.
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Add the chicken to the skillet and cook until browned on both sides, about 4-5 minutes per side.
  4. Remove the chicken from the skillet and set aside.
Cooking
  1. In the same skillet, add the chicken broth and heavy cream, stirring to combine.
  2. Add the sun-dried tomatoes and bring the mixture to a simmer.
  3. Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.
  4. Stir in the Parmesan cheese and let it melt.
  5. Garnish with fresh parsley and serve over pasta or rice.

Notes

For added flavor, marinate the chicken for at least an hour before cooking. If you prefer a thicker sauce, let it simmer longer before adding the chicken back in. Store leftovers in an airtight container in the refrigerator for up to three days.
