Preparation
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Add the chicken to the skillet and cook until browned on both sides, about 4-5 minutes per side.
- Remove the chicken from the skillet and set aside.
Cooking
- In the same skillet, add the chicken broth and heavy cream, stirring to combine.
- Add the sun-dried tomatoes and bring the mixture to a simmer.
- Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.
- Stir in the Parmesan cheese and let it melt.
- Garnish with fresh parsley and serve over pasta or rice.
Notes
For added flavor, marinate the chicken for at least an hour before cooking. If you prefer a thicker sauce, let it simmer longer before adding the chicken back in. Store leftovers in an airtight container in the refrigerator for up to three days.
