Cake mixture
  • 1 box mix of chocolate cake (or make from scratch; use the standard amount of cake for a 9×13 pan)
  • 1 12.5 oz / 355 g can chocolate frosting
  • 1 cup chocolate chips
  • 1/2 teaspoon peppermint extract

Coating and decorating
  • almond bark for coating
  • melted chocolate for drizzling
  • sprinkles for decorating

Method
 

Preparation
  1. Bake the cake according to the package directions, slightly underbaking if desired.
  2. Crumble the baked cake into a large mixing bowl. Add the frosting and peppermint extract, then mix with clean hands until the texture is smooth and evenly combined like a cookie dough.
  3. Stir in the chocolate chips and chill the mixture briefly to make it easier to handle.
  4. Roll the mixture into balls and freeze them until firm.
Assembly
  1. Melt the almond bark. Coat each chilled cake ball, then place the coated bites on wax paper or foil.
  2. Drizzle the bites with melted chocolate and add sprinkles before the coating sets.
  3. Transfer the finished bites back to the refrigerator or freezer for storage until ready to use.

Notes

Keep the shaped cake bites cold before coating so they hold their shape during the coating process.
