Ingredients

For the cake layers
  • 2 cups all-purpose flour Sifted
  • 1 cup unsweetened cocoa powder Sifted to remove lumps
  • 2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 large eggs (room temperature) For better emulsification
  • 1 cup whole milk Room temperature
  • 2 tsp vanilla extract
For the frosting

  • 4 cups powdered sugar For frosting
  • 8 oz cream cheese (softened) For frosting
For flavoring the layers
  • 1 cup melted chocolate For the chocolate layer
  • 1 cup pureed strawberries Use minimal liquid

Method

Preparation
  1. Preheat oven to 350°F (175°C). Grease three round cake pans or line with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until well combined.
  3. In another bowl, blend eggs, milk, and vanilla extract until smooth.
  4. Gradually add this mixture to the dry ingredients without overmixing.
  5. Divide the batter into three portions: mix melted chocolate into one portion, pureed strawberries into another, and leave the third as vanilla.
  6. Pour each flavored batter into its respective prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.
Frosting and assembly
  1. Frost between layers with cream cheese frosting; cover the entire cake once assembled.

Notes

Serve slices at room temperature for best flavor and texture. Pairs well with vanilla ice cream or whipped cream.
