Preparation
- Combine the water, sugar, cilantro, and jalapeño in a small saucepan and bring to a low simmer for about 5 minutes until the sugar dissolves and the flavors infuse.
- Strain out the cilantro and jalapeño, then transfer the syrup to a jar or small pitcher and refrigerate until ready to use.
- Mix the Tajin, coarse salt, and sugar together on a small plate. Moisten the rim or side of a glass with a small amount of lime juice or simple syrup, then dip into the seasoning mixture to coat.
Assembly
- Add a few ice cubes to the glass. Pour in 1.5 ounces lime juice, 2 ounces jalapeño cilantro simple syrup, and enough tonic water to taste.
- Stir gently in the glass to combine, or use a shaker to mix the drink before serving.
Notes
Tonic water does not contain alcohol but includes small amounts of quinine, which provides its bitter flavor. Some people are sensitive to quinine or prefer to avoid it during pregnancy. Alternatives include sparkling water with a bitter element like grapefruit, a small amount of bitters, sweeter sparkling beverages, or plain sparkling water. Fresh lime juice can be prepared ahead for convenience, and the jalapeño cilantro syrup can be kept ready in the refrigerator for quick drinks.
