  • 4 pieces boneless, skinless chicken breasts (1.5 lbs) Pat chicken dry before searing for best browning.
  • 8 oz egg noodles Can substitute with whole wheat or gluten-free noodles.
  • 4 tbsp real butter Add the last tablespoon at the end for gloss.
  • 4 cloves garlic, minced Chop garlic before starting.
  • 2 cups low-sodium chicken broth Adjust seasoning based on broth saltiness.
  • ¼ cup fresh parsley, chopped Add last for color and freshness.
  • to taste none Salt and pepper Season broth and chicken well.

Preparation
  1. Prep your ingredients by chopping garlic and any desired vegetables.
Cooking
  1. Sear chicken in a large skillet over medium-high heat with 1 tablespoon of butter until golden brown (about 5 minutes per side). Season with salt and pepper.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Stir in egg noodles and simmer for 8 to 10 minutes until al dente.
  5. Remove from heat; stir in remaining butter and sprinkle with parsley before serving.

Notes

Serve the chicken sliced over the buttered egg noodles. Pair with a green salad or steamed beans, and consider adding a squeeze of lemon at the table for brightness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
