  • 1 box vanilla cake mix
  • 1 box (3 oz) orange gelatin mix
  • 1 cup orange juice Use bottled or fresh orange juice as desired.
  • 1/2 cup vegetable oil
  • 3 large eggs Best if at room temperature.
  • 1 tsp vanilla extract
  • 1 tsp orange zest Gently fold into batter.
Frosting Ingredients
  • 1 cup butter, softened
  • 4 cups powdered sugar Sift to avoid lumps.
  • 2 tbsp heavy cream Add more if frosting is too stiff.
  • 2 tbsp orange extract (optional) Enhances frosting flavor.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. In a large bowl, combine the cake mix and gelatin mix.
  4. Add orange juice, oil, eggs, vanilla extract, and orange zest.
  5. Beat until smooth.
  6. Divide batter evenly into pans.
Baking
  1. Bake for 25-30 minutes or until a toothpick comes out clean.
  2. Let cool in pans for 10 minutes before transferring to wire racks.
Frosting
  1. In a bowl, beat softened butter until fluffy.
  2. Gradually mix in powdered sugar.
  3. Add heavy cream and optional orange extract, beating until smooth.
Assembly
  1. Frost the first cake layer, stack the second layer, and frost the entire cake.
  2. Slice and serve.

Notes

Store covered at room temperature for up to 2 days or in the fridge for up to 5 days. For longer storage, freeze individual slices wrapped tightly.
