Preparation
- Preheat oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
- In a large bowl, combine the cake mix and gelatin mix.
- Add orange juice, oil, eggs, vanilla extract, and orange zest.
- Beat until smooth.
- Divide batter evenly into pans.
Baking
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool in pans for 10 minutes before transferring to wire racks.
Frosting
- In a bowl, beat softened butter until fluffy.
- Gradually mix in powdered sugar.
- Add heavy cream and optional orange extract, beating until smooth.
Assembly
- Frost the first cake layer, stack the second layer, and frost the entire cake.
- Slice and serve.
Notes
Store covered at room temperature for up to 2 days or in the fridge for up to 5 days. For longer storage, freeze individual slices wrapped tightly.
