Main Ingredients
  • 2 peaches, pitted and sliced Choose ripe but firm peaches to avoid mushy texture.
  • 1/2 English cucumber thinly sliced Use a mandoline for uniform thinness.
  • 1/2 shallot thinly sliced Use a mandoline for uniform thinness.
  • 2 to 3 teaspoons olive oil
  • 1 lime, juiced and zested Zest before juicing to capture fragrant oils.
  • to taste salt and pepper Season at the end to avoid drawing excess water from fruit.
  • mint leaves Add at the end to preserve color and aroma.
  • 2 to 3 teaspoons hot honey Drizzle sparingly and taste for balanced sweetness.

Method
 

Preparation
  1. Do all your slicing/prep using a mandoline for the shallots and cucumber.
  2. Toss the cucumbers and shallots with lime juice, lime zest, olive oil, and a bit of salt and pepper. Let them sit for 5 to 15 minutes.
  3. Add peaches, mint leaves, and a drizzle of hot honey. Toss gently to combine.
  4. For a decorative touch, serve with extra mint leaves, hot honey, and additional salt and pepper on top.
  5. Eat right away, within an hour.

Notes

Serve chilled or at cool room temperature. Best served alongside grilled chicken or fish. Offer extra lime wedges and hot honey on the side.
