Preparation
- Heat the oven to 350°F (175°C). Prepare a large rimmed baking sheet with parchment paper.
- Whisk the coconut sugar and eggs together in a medium bowl until smooth. Mix in the vanilla extract and salt until combined.
- Add the peanut butter and stir until the dough becomes smooth and fully blended. Fold in the chocolate chips until evenly distributed.
- If a firmer, more rounded cookie shape is desired, chill the dough for 15 minutes before portioning. Scoop heaping tablespoons of dough onto the prepared baking sheet, leaving 1 to 2 inches between cookies. Keep remaining dough chilled while baking batches.
Baking
- Bake the cookies for 11 to 13 minutes, until the edges are golden and the centers remain slightly soft.
- Leave the cookies on the hot baking sheet for 2 minutes, then transfer them with a metal spatula to a cooling rack to cool completely. Continue baking the remaining dough.
Notes
The results may vary slightly depending on the consistency of the peanut butter used. Softer peanut butter may require additional chilling time for the dough. The original notes also mention that brown sugar can replace the coconut sugar and that sea salt can be sprinkled on top if desired.
