Preparation
- Preheat the oven to 275°F (135°C).
- Combine the rolled oats, peanuts, whole wheat flour, baking powder, and salt in a large bowl.
- Whisk the peanut butter, canola oil, maple syrup, vanilla, and milk together until smooth.
- Add the wet mixture to the oat mixture and stir until evenly combined.
Baking
- Line a large 9×13 or larger jelly roll pan with parchment paper.
- Spread the granola mixture evenly across the prepared pan.
- Bake for 15 minutes, then stir once.
- Bake for another 15 minutes until the granola is golden brown and dry to the touch, checking before the timer ends to prevent overbrowning or excessive drying.
Cooling
- Leave the granola undisturbed for 2-3 hours to cool, form clusters, and develop its crunchy texture.
Serving
- Serve the granola clusters with yogurt, fruit, ice cream, milk, or enjoy them as a snack.
Notes
The granola has the best flavor and texture after it has cooled. A small sprinkle of extra sea salt can add a salty-sweet contrast. The recipe can be customized with different nuts, nut butters, and sweeteners. A honey almond variation was also made using sliced almonds, almond butter, and a combination of honey and brown rice syrup.
