Preparation
- Preheat the oven to 425°F (218°C). Pat the chicken dry with paper towels. Place the chicken and sliced peppers on a baking sheet, coat with olive oil, and season with salt and pepper.
Cooking
- Roast the chicken and peppers for 30 minutes, or until the chicken is fully cooked.
- While the chicken and peppers roast, warm olive oil in a skillet. Add the onion, garlic, chipotle peppers, oregano, cumin, and other spices, then sauté for about 10 minutes.
- Add the crushed tomatoes and salt to the skillet. Simmer for another 10 minutes, then transfer the mixture to a blender and blend until smooth.
- Remove the baking sheet from the oven. Shred the chicken and combine it with the sauce, adding as much sauce as desired.
Serving
- Serve the sauced chicken and roasted peppers with quinoa, rice, cauliflower rice, beans, tortillas, greens, or on its own.
Notes
Combining this recipe with additions like black beans and quinoa can increase the number of servings. If served with fewer additions, it will make closer to 3 servings. Extra sauce is normal and can be saved for later use; it freezes well and can be added when reheating meals.
