Preparation
- Bring a pot of water to a boil for the noodles.
- Heat olive oil in a small skillet over medium-high heat.
- Remove excess moisture from the shrimp and place them in the hot skillet. Cook without moving for 1-2 minutes, then flip and cook the other side. Season with salt and pepper while cooking.
- Once the shrimp are cooked through, remove them from the heat and set aside.
Cooking
- Cook the capellini in the boiling water according to the package directions.
- Using the same skillet, add the garlic and butter and lower the heat to medium. Sauté for 3 minutes, stirring continuously, until the garlic is soft and fragrant.
- Add the white wine and simmer for a few minutes until the liquid reduces.
- Add the lemon pieces and sauté for another 1-2 minutes.
- Return the shrimp to the skillet briefly to warm through.
Assembly
- Drain the noodles and return them to the saucepan.
- Add the shrimp, lemon, and garlic mixture along with the fresh parsley, then toss to combine.
- Season with salt and pepper and finish with a small amount of Parmesan cheese.
Notes
If using frozen raw shrimp with shells, peel the shells off before cooking. Removing the tails is optional but makes the finished dish easier to eat. The lemon flavor can be adjusted by finely chopping lemon with the rind included or using 1/2 tablespoons lemon juice and a spoonful of zest.
