Spicy Shrimp With Peach Salad

Ingredients
  

For the Shrimp
  • 1 lb shrimp Use fresh or thoroughly thawed shrimp.
  • 1 teaspoon smoked paprika
  • 1 teaspoon curry powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse sea salt
  • 1/4 teaspoon cayenne pepper Adjust to taste.
  • 1 tablespoon butter For glazing shrimp.
  • 1 drizzle honey Add more to finish.
For the Peach Salad
  • 2 peaches, pitted and sliced Use ripe but firm peaches.
  • 1/2 English cucumber thinly sliced
  • 1/2 shallot thinly sliced
  • 2 to 3 teaspoons olive oil For dressing.
  • 1 lime juiced and zested For freshness.
  • salt and pepper to taste
  • mint leaves Fresh mint for garnish.
  • 2 to 3 teaspoons honey to finish
  • 1 avocado, cubed Optional addition.

Method
 

Preparation
  1. Toss all ingredients together for the peach salad. Prepare the avocado, if using.
  2. Prep anything else you might serve this with (like rice).
  3. Toss the shrimp with the spices.
Cooking
  1. Heat a drizzle of avocado oil in a skillet over medium heat.
  2. Add the shrimp and cook until no longer translucent, about 2 minutes per side.
  3. Add a knob of butter and a drizzle of honey at the end of cooking to toss with the shrimp.
Serving
  1. Plate the shrimp over rice with a generous scoop of peach salad.
  2. Serve with wedges of lime and extra mint on the side.

Notes

Store peach salad and cooked shrimp separately. Serve shrimp over rice or in tortillas. Add cubed avocado just before serving to prevent browning.
