  • 3/4 cup olive oil
  • 1/4 cup water
  • 2 tablespoons white vinegar
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 clove garlic
  • black pepper to taste
  • fresh herbs optional (see notes)
  • fresh lemon (see notes)

Preparation
  1. Combine all ingredients in a blender or food processor and blend until the sauce is smooth and creamy.
  2. Serve the sauce with roasted vegetables, salads, meal prep dishes, or other foods as desired.

Notes

For a pantry-friendly version, keep the base recipe without fresh herbs and lemon, then add them when available for extra flavor. Fresh lemon adds brightness, and fresh herbs such as parsley, basil, or cilantro can shift the flavor style for different meals. Store the sauce in a jar in the refrigerator for about one week and shake before using if it separates. If the oil firms up in the refrigerator, let the jar sit at room temperature briefly or warm it under water before shaking. If the sauce becomes too thick, add a little more water.
