Ingredients
  

For the Mint Simple Syrup
  • 1.5 cups water
  • 1.5 cups sugar
  • 1/4 to 1/2 cups fresh mint leaves
For the Iced Coffee
  • 1/2 cups strong cold brew
  • 1 cups oatmilk or milk of choice
  • 2 to 3 tablespoons mint syrup Add to taste
  • ice cubes ice cubes For serving

Method
 

Simple Syrup Preparation
  1. In a small saucepan, combine water, sugar, and fresh mint.
  2. Bring to a low simmer for 15 to 20 minutes until the sugar dissolves and the syrup tastes minty.
  3. Optional: add a split vanilla bean for flavor.
  4. Store syrup in the fridge, leaving mint or vanilla bean for extra flavor if desired.
Iced Coffee Preparation
  1. In a glass, combine cold brew, your choice of milk, and the desired amount of mint syrup.
  2. Add ice cubes and stir to combine.

Notes

Serve over plenty of ice to keep the drink cold without diluting flavor quickly. Pair with light pastries, biscotti, or fresh fruit. Adjust syrup quantity to taste.
