  • 1/2 cup artichokes, drained and chopped
  • 1/2 cup fresh spinach, chopped
  • 4 tbs. mozzarella cheese

Method

Assembly
  1. Split the toppings evenly between the two bread slices, layering them in this order: hummus, roasted red peppers, spinach, artichokes, and mozzarella cheese.
Cooking
  1. Broil the assembled bread slices at 400°F (205°C) for about 10 minutes, or until the cheese has melted.
  2. Finish with a sprinkle of cayenne and a drizzle of olive oil before serving.

Notes

Drain the artichokes and roasted peppers before assembling to help maintain the bread's texture.
