  • 1/2 cup uncooked farro
  • 1 1/2 cups vegetable or chicken broth
  • 1 cup canned white beans, rinsed and drained
  • 1 cup halved grape tomatoes
  • 2 cups baby kale or spinach
  • 1/2 cup Asiago or Parmesan cheese
  • 1 cup tomato sauce
  • salt and pepper to taste

Cooking
  1. Place the farro and broth in a rice cooker and start the cooking cycle. Alternatively, cook the farro in a small saucepan on the stovetop according to package directions until soft and chewy.
  2. Add the white beans, grape tomatoes, kale, Asiago, and tomato sauce to the cooked farro in the rice cooker or pot.
  3. Stir the ingredients together and season with additional salt and pepper as needed.
