Preparation
- Preheat the oven to 425°F (218°C). Peel the sweet potatoes and cut them into wedges or another preferred shape.
- Arrange the sweet potatoes on a large baking sheet and coat them with avocado oil and taco seasoning.
- Peel the red onion and slice it into thin wedges, then place the pieces around the sweet potatoes on the baking sheet.
Baking
- Bake the vegetables for a total of 35 minutes. After 20 minutes, remove the pan, turn the sweet potato pieces, and add the meatballs if using pre-cooked meatballs.
- If using store-bought pre-cooked meatballs, place them on the baking sheet for the final 15 minutes of baking so they warm through.
Sauce
- While the vegetables roast, blend the avocado sauce ingredients until smooth. Taste and adjust as needed, then set aside.
Assembly
- Add avocado sauce to plates or bowls, then top with the meatballs, roasted sweet potatoes, and onions.
Notes
Add the mayo for a creamier sauce texture if desired. The sauce keeps for two days in the fridge. The sauce is mild as written, but adding a jalapeño can add heat. If the taco seasoning does not contain corn starch or corn flour, add a light sprinkle (1 teaspoon) with the taco seasoning to help the sweet potato fries develop a crispier golden exterior.
