Ingredients
  

Soup
  • 1 tablespoon olive oil
  • 1 yellow onion, sliced
  • 2 pounds carrots, peeled and cut into chunks
  • 2 tablespoons beef flavor base
  • 2 teaspoons hot Madras curry powder (regular curry powder works, too)
  • 1 14-ounce (397 g) can coconut milk
  • 3 1/2 cups water
Spiced Ground Beef
  • 1 tablespoon olive oil
  • 1 pound (454 g) ground beef
  • 1 tablespoon tomato paste
  • 2 teaspoons beef flavor base
  • 1 teaspoon garam masala
  • 1/3 cup pine nuts
  • 1/4 cup finely chopped parsley
  • lemon zest, as needed
Serving
  • thinly sliced shallot
  • plain yogurt
  • flatbread

Method
 

Soup Preparation
  1. Heat a soup pot over medium-high heat. Add olive oil, onion, carrots, beef flavor base, and curry powder, then sauté for 3-5 minutes.
  2. Pour in water and simmer for 15 minutes.
  3. Add coconut milk and blend the soup with an immersion blender until smooth.
Spiced Beef Topping
  1. Heat a large skillet with olive oil over medium-high heat. Cook the ground beef until browned and fully cooked, seasoning with a small amount of salt and pepper as needed.
  2. Add tomato paste, beef flavor base, and garam masala to the beef and sauté for 2-3 minutes.
  3. Stir in pine nuts, parsley, and lemon zest, then cook until the mixture is toasted and fragrant.
Serving
  1. Serve the soup topped with a scoop of the spiced ground beef mixture and add desired toppings such as thinly sliced shallot, plain yogurt, and flatbread.

Notes

To make the yogurt easier to drizzle over the soup, thin it with a small amount of water until it flows easily from a spoon.
