Ingredients

  • 1 huge bunch of fresh cilantro (2 cups packed)
  • 1/2 cup olive oil
  • 2 tablespoons white vinegar
  • 1 clove garlic
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes
  • 1/4 to 1/2 cup water, if needed

Method

Preparation
  1. Blend all ingredients together for about 1 minute until the mixture is smooth.
  2. Add water as needed to help the blender process the mixture and reach the desired consistency.
  3. Taste the vinaigrette and adjust the seasoning as needed before serving.

Notes

The original recipe was adjusted by omitting the shallot, using white vinegar instead of red wine vinegar for a sharper tang, and adding water when needed to help the blender run smoothly. Keep the vinaigrette in a jar in the refrigerator for 3-4 days.
